Callia Alta Shiraz 2010

Deep red wine, with bluish shades. Aromas reminiscent of plums and ripe figs, tobacco and spices. Very complex and creamy in the mouth, good structure and remarkable presence of ripe tannins.

Own vineyards located in Caucete, at 650 meters above sea level. Alluvial soils, poor in organic content. Drip irrigation with snowmelt runoff from the Andes. Vines trained on trellis.

Vintage started in February and ended in March. The grapes were hand-harvested and carried to the winery in 400-kg bins. Clusters weremanually selected before de-stemming. Pre-fermentative maceration was performed at 12ºC for 72 hours. Fermentation took place at 25ºC for 10 days, with the inoculation of select yeasts.
